I would like to announce a momentous occasion - I have officially made a place for myself in my mother-in-law's recipe box! I gave her a recipe I found in a book called Miserly Moms by Jonni McCoy. I hope to write a review on the entire book pretty soon, but here is the recipe:
Curry Chicken
2 C. cooked chicken, chopped
5 T. butter
1/2 C. minced onion
6 T. flour
4 1/2 tsp. curry powder
1 1/4 tsp. salt
1 1/2 tsp. sugar
1/4 tsp. ginger
1 cube chicken bouillon
2 1/2 C. milk
1 tsp. lemon juice
1 C. diced apple
1 C. raisins (optional)
Melt butter, add onion and cook until golden.
Add next five ingredients, stir into a paste.
Add bouillon and milk, stir until thickened.
Add meat, apple, raisins (if desired), and lemon juice.
Cook until meat is hot and serve.
This recipe is good served over rice. I always use the raisins - they're a fun touch. I don't usually use the butter - I brown the onion with cooking spray, instead. It doesn't form the a nice paste, like the recipe says, but it turns out fine.
Does anyone know if apples freeze well? I'm considering makind the chicken and chopping up the apples and freezing them for a quick fix meal. I don't do this very often, but I've found that even having a few pieces of seasoned and cooked chicken in the freezer has been a life-saver on a busy (or lazy!) nights!

Making it tonight...bought some "light" coconut milk going to use half milk~half coconut milk.
